This is pho ga, the lighter chicken cousin of Vietnam's famous noodle soup. A quick but properly spiced broth carries poached chicken, silky rice noodles and a generous pile of fresh herbs. It comes together in under an hour without sacrificing depth.
Great pho lives or dies on its broth, and the trick is charring the ginger and onion first, then steeping whole spices rather than boiling them to bitterness. This chicken version is quicker and cleaner than beef pho, but every bit as aromatic. Build the bowls at the table so everyone tunes their own with lime, chilli and herbs.
Ingredients
- 1.2 litres good chicken stock — fresh or from stock pots
- 500 ml water
- 1 large onion — halved, skin on
- 50 g fresh ginger — halved lengthways, unpeeled
- 3 star anise
- 1 cinnamon stick
- 3 cloves
- 1 tsp coriander seeds
- 2 tbsp fish sauce — plus more to taste
- 1 tsp caster sugar — or yellow rock sugar
- 400 g boneless skinless chicken thighs — or a mix of thigh and breast
- 250 g dried flat rice noodles (banh pho) (9 oz)
- 3 spring onions — finely sliced
- 1 large handful fresh herbs to serve — Thai basil, coriander and mint
Method
- Set a dry frying pan or the grill to high. Char the onion halves and ginger cut-side down until blackened in patches and fragrant, 4-5 minutes. This smoky sweetness is the backbone of the broth.
- Toast the star anise, cinnamon, cloves and coriander seeds in a large pan over medium heat for a minute until they smell warm and nutty, then pour in the stock and water.
- Add the charred onion and ginger, bring to a gentle simmer, then slip in the chicken thighs. Poach softly (never a hard boil) for 20 minutes, until the chicken is cooked through with no pink in the centre.
- Lift out the chicken and set aside to cool a little. Keep the broth simmering gently and let the spices continue to steep for another 10 minutes to deepen the flavour.
- Meanwhile, soak the rice noodles in just-boiled water until soft and pliable, following the packet timing, then drain well. Shred or slice the cooled chicken into bite-sized pieces.
- Season the broth with the fish sauce and sugar, then taste: it should be savoury, faintly sweet and aromatic. Add a splash more fish sauce if it needs lifting. Strain out the whole spices, onion and ginger.
- Divide the noodles between four deep bowls and top with the shredded chicken and spring onions. Ladle over the piping hot broth so it warms everything through.
- Serve at once with the herbs, lime wedges and chilli alongside so everyone can finish their own bowl.

Reheating: Reheat the broth in a pan until piping hot, warm the chicken through in it, then pour over fresh noodles and herbs.
