Bolognese is the perfect thing to cook in bulk: it only gets better with a long simmer, and it freezes without losing a thing. This recipe makes a generous eight-portion pot from one pan, so you can serve a family dinner tonight and stash the rest for those evenings when cooking from scratch feels like too much.
Ingredients
- 3 tbsp olive oil
- 2 onions — finely chopped
- 2 carrots — finely diced
- 2 celery sticks — finely diced
- 4 garlic cloves — crushed
- 1 kg beef mince — ideally 15-20% fat
- 2 tbsp tomato purée
- 250 ml red wine — or beef stock
- 2 x 400g tins chopped tomatoes
- 500 ml beef stock — hot
- 2 tsp dried oregano
- 2 bay leaves
- 1 tbsp Worcestershire sauce
- 1 tsp sugar — to balance the tomatoes
Method
- Heat the olive oil in a large, heavy-based pan or casserole over a medium heat. Add the onions, carrots and celery with a pinch of salt and cook gently for 8-10 minutes, stirring often, until soft and sweet but not coloured. Stir in the garlic and cook for another minute.
- Turn the heat up to high and add the beef mince. Break it up well with a wooden spoon and fry for 8-10 minutes, letting it catch and brown properly. You want deep colour on the meat with no pink remaining, as that browning is where the flavour lives.
- Stir in the tomato purée and cook for 2 minutes so it darkens slightly and loses its raw edge. Pour in the red wine, scrape up any sticky bits from the base of the pan, and let it bubble down for 3-4 minutes until reduced by half.
- Add the chopped tomatoes, hot stock, oregano, bay leaves, Worcestershire sauce and sugar. Season with salt and plenty of black pepper and bring up to a gentle simmer.
- Lower the heat and simmer uncovered for around 45 minutes, stirring now and then, until the sauce is rich, thick and glossy and the mince is completely tender. If it reduces too fast, add a splash of water; if it looks loose, simmer a little longer.
- Fish out the bay leaves and taste for seasoning, adjusting salt, pepper and a touch more sugar if the tomatoes are sharp. Make sure the bolognese is piping hot throughout before serving.
- Serve what you need now, then cool the rest quickly before portioning into freezer containers or bags for later.
