Classic Beef Lasagne with Rich Ragu

This is the beef lasagne you want on a Sunday: a deeply savoury meat sauce, a smooth cheesy bechamel and tender pasta baked until bubbling. It takes a little care but every layer earns its place, and it slices beautifully once rested.

There is no shortcut to a great lasagne, but there is a reliable method. You build a rich beef ragu, whisk a proper white sauce, then layer both with pasta sheets and plenty of cheese. Give it time in the oven and a good rest before cutting, and you get clean, generous slices that hold their shape on the plate.

Ingredients

Scale for 6 servings
  • 1 tbsp olive oil
  • 500 g beef mince — 12-15% fat for the best flavour
  • 1 onion — finely chopped
  • 2 cloves garlic — crushed
  • 1 carrot — finely diced
  • 2 tbsp tomato puree
  • 800 g chopped tomatoes — 2 tins
  • 200 ml beef stock
  • 1 tsp dried oregano
  • 50 g butter
  • 50 g plain flour
  • 600 ml whole milk
  • 125 g mature Cheddar or Parmesan — grated
  • 250 g dried lasagne sheets — about 12 sheets

Method

  1. Heat the oil in a large pan over a medium-high heat. Add the beef mince and fry, breaking it up, until well browned all over with no pink remaining, around 6-8 minutes. Spoon out any excess fat if there is a lot.
  2. Stir in the onion, carrot and garlic and cook gently for 5 minutes until softened. Add the tomato puree and cook for a minute, then tip in the chopped tomatoes, stock and oregano. Season well.
  3. Bring to a simmer, then turn the heat down low and cook uncovered for 25-30 minutes, stirring now and then, until thick and glossy. Taste and adjust the seasoning.
  4. Meanwhile make the white sauce. Melt the butter in a saucepan, stir in the flour and cook for 1 minute. Gradually whisk in the milk over a medium heat until smooth and thickened, about 5 minutes. Stir in half the cheese and season with salt and a little pepper.
  5. Heat the oven to 190C fan / 210C / gas 6. Spread a thin layer of ragu over the base of a large ovenproof dish (about 30 x 20 cm). Cover with a layer of lasagne sheets, snapping them to fit.
  6. Spoon over more ragu, then a layer of white sauce. Repeat the layers, finishing with a generous layer of white sauce on top. Scatter over the remaining cheese.
  7. Bake for 40-45 minutes until the top is golden and bubbling and the pasta is tender when pierced with a knife. The lasagne should be piping hot throughout.
  8. Rest for 10-15 minutes before cutting. This lets the layers settle so you get neat slices rather than a slide of sauce.

  • A crisp green salad with a sharp dressing
  • Garlic bread or warm ciabatta
  • Steamed green beans or tenderstem broccoli
  • A glass of Italian red

Why this works

Simmering the ragu uncovered concentrates the flavour and drives off excess liquid, so the finished lasagne holds together instead of turning watery. Resting before slicing lets the sauces set just enough to cut cleanly.

Common swaps

  • Swap half the beef for pork mince for a richer, more traditional ragu
  • Use fresh lasagne sheets and drop the bake time by about 5 minutes
  • Stir 100 g of chopped mushrooms into the ragu to bulk it out
  • Replace the Cheddar with mozzarella for a milder, stretchier top

Common mistakes to avoid

  • Not simmering the ragu long enough, leaving it thin and watery so the lasagne collapses
  • Skimping on white sauce, which keeps the pasta layers moist as they cook
  • Cutting straight from the oven before it has rested and set
  • Under-seasoning the layers, which leaves the finished dish flat

Storage, freezing & reheating

Storage: Keep leftovers covered in the fridge for up to 3 days. Cut into portions once cold for easy reheating.

Freezing: Freezes very well, either whole or in portions, for up to 3 months. Cool completely first, then wrap tightly. Defrost fully in the fridge before reheating.

Reheating: Reheat individual portions in the microwave for 3-4 minutes, or cover with foil and warm in a 180C fan oven for 20-25 minutes, until piping hot all the way through.
