This version leans on store-cupboard spices to turn plain beef mince into something rich and savoury in the time it takes to lay out the toppings. Warm your tortillas, set out the bowls, and let everyone assemble their own at the table. No special kit, no fuss.

Ingredients

Scale for 4 servings
  • 1 tbsp olive oil
  • 1 onion — finely chopped
  • 500 g beef mince — 5% or 10% fat
  • 2 cloves garlic — crushed
  • 2 tsp ground cumin
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 0.5 tsp chilli powder — or more to taste
  • 2 tbsp tomato puree
  • 100 ml beef stock or water
  • 8 small tortillas — corn or flour, warmed
  • 1 Little Gem lettuce — shredded
  • 100 g mature Cheddar — grated
  • 1 lime — cut into wedges

Method

  1. Heat the olive oil in a large frying pan over a medium heat. Add the onion and cook for 4-5 minutes until softened and translucent.
  2. Turn the heat up to medium-high and add the beef mince. Break it up with a wooden spoon and fry for 5-6 minutes, until browned all over with no pink remaining.
  3. Stir in the garlic, cumin, smoked paprika, oregano and chilli powder. Cook for 1 minute until fragrant, stirring so the spices coat the meat.
  4. Add the tomato puree and cook for another minute, then pour in the stock. Season well with salt and pepper.
  5. Simmer for 4-5 minutes, stirring now and then, until the liquid has reduced to a thick, glossy sauce and the beef is piping hot throughout.
  6. Meanwhile, warm the tortillas in a dry pan for 20-30 seconds each side, or wrap in foil and heat in a low oven.
  7. Spoon the beef into the warm tortillas and top with shredded lettuce and grated Cheddar. Serve with lime wedges for squeezing over.

Why this works

  • No individual spices? A 30g packet of taco seasoning works in a pinch.
  • Swap Cheddar for crumbled feta or a Mexican-style cheese.
  • Stir in a drained tin of black beans or kidney beans to stretch it further.
  • Use hard taco shells instead of soft tortillas if you prefer the crunch.

Common mistakes to avoid

  • Overcrowding the pan so the mince steams instead of browning; use a wide pan and high heat.
  • Skipping the spice-blooming step, which leaves the seasoning tasting raw and flat.
  • Letting the mixture go dry; keep a little sauce so the filling stays juicy in the tortilla.
  • Serving cold tortillas straight from the pack; a quick warm makes them pliable and stops them cracking.

Storage, freezing & reheating

Storage: Cool any leftover beef quickly and keep it in an airtight container in the fridge for up to 3 days. Store toppings and tortillas separately.

Freezing: The cooked beef filling freezes well for up to 3 months. Cool completely, freeze in a sealed container, and defrost fully in the fridge before reheating.

Reheating: Reheat the beef in a pan or microwave until piping hot throughout, adding a splash of water if it looks dry.
