Cauliflower cheese lives or dies on two things: cauliflower cooked just to tender, and a cheese sauce with real depth. Get both right and you have a side that quietly steals the plate. This version keeps the florets with a little bite, builds a proper mustardy cheddar sauce, and finishes under a crisp, savoury crust that shatters as you serve it.

Ingredients

Scale for 6 servings
  • 1 large cauliflower — about 800g, broken into even florets
  • 50g butter
  • 50g plain flour
  • 600ml whole milk — warmed
  • 150g mature cheddar — grated, plus 40g extra for the top
  • 1 tsp English mustard — or 2 tsp Dijon
  • 1 pinch grated nutmeg
  • 30g parmesan — finely grated, or extra mature cheddar
  • 25g panko or fresh breadcrumbs
  • 1 bay leaf — optional, for infusing the milk
  • to taste salt and white pepper

Method

  1. Heat the oven to 200C/180C fan/gas 6. Bring a large pan of well-salted water to the boil. Add the cauliflower florets and cook for 5-6 minutes, until just tender to the tip of a knife but still holding their shape. Drain very well and leave in the colander to steam-dry while you make the sauce.
  2. Melt the butter in a medium saucepan over a medium heat. Stir in the flour and cook, stirring constantly, for 1-2 minutes to form a pale roux; don't let it colour.
  3. Gradually pour in the warm milk a little at a time, whisking well between each addition to keep the sauce smooth. Drop in the bay leaf if using. Bring to a gentle simmer and cook, stirring, for 4-5 minutes until the sauce is thick enough to coat the back of a spoon.
  4. Remove from the heat and fish out the bay leaf. Stir in the mature cheddar, mustard and nutmeg until the cheese melts into a glossy sauce. Season generously with salt and white pepper; it should taste bold, as the cauliflower will mellow it.
  5. Tip the drained cauliflower into a buttered baking dish, arranging it in a single-ish layer. Pour over the cheese sauce, nudging it down between the florets so everything is well coated.
  6. Mix the reserved 40g cheddar, the parmesan and breadcrumbs together and scatter evenly over the top.
  7. Bake for 25-30 minutes, until the sauce is bubbling at the edges and the top is deeply golden and crisp. If you want more colour, flash it under a hot grill for a minute or two at the end.
  8. Let it settle for 5 minutes before serving, so the sauce firms up enough to spoon cleanly.

Common mistakes to avoid

  • Overcooking the cauliflower so it collapses into mush once baked; keep it just tender
  • Skipping the draining step, leaving watery sauce pooling in the dish
  • Under-seasoning the sauce, so the finished bake tastes bland once the cauliflower is added
  • Adding the milk too quickly, which gives a lumpy sauce; whisk in stages

Storage, freezing & reheating

Storage: Cool, cover and keep in the fridge for up to 3 days.

Freezing: Freezes well: assemble but don't bake, then freeze for up to 2 months. Defrost fully in the fridge before baking as directed, adding 5-10 minutes.

Reheating: Reheat in a 180C/160C fan oven for 20-25 minutes until piping hot throughout, covering with foil if the top browns too fast.
