This is chicken paella done the honest Spanish way: golden-browned thighs, a slow-cooked sofrito, saffron-stained rice and that prized crisp socarrat at the base. It looks after itself once the stock goes in, so you get real depth of flavour from one pan with very little fuss.
Paella is less about a recipe and more about respecting the rice. Get a good sofrito, bloom your saffron and smoked paprika, then leave the pan alone so the base can catch into socarrat. This chicken version skips seafood entirely, letting browned thighs and paprika carry it — deeply savoury, gently smoky and genuinely Spanish.
Ingredients
- 6 bone-in, skin-on chicken thighs — or 8 boneless thighs, halved
- 3 tbsp olive oil
- 1 onion — finely chopped
- 1 red pepper — diced
- 3 garlic cloves — grated or crushed
- 2 ripe tomatoes — grated, skins discarded (or 4 tbsp passata)
- 2 tsp smoked paprika (pimentón) — sweet or a mix of sweet and hot
- 1 large pinch saffron threads — about 20 threads
- 300 g paella rice (10½ oz) — Bomba or Calasparra; short-grain risotto rice at a push
- 900 ml hot chicken stock (1½ pints)
- 100 g green beans — trimmed and halved
- 1 lemon — cut into wedges, to serve
- 2 tbsp flat-leaf parsley — chopped
- 1 tsp salt — plus more to taste
Method
- Warm the saffron in a dry small pan for 20 seconds until fragrant, then crush and stir into the hot stock to steep. Season the chicken thighs well with salt.
- Heat the olive oil in a wide paella pan or large shallow frying pan over medium-high. Brown the chicken skin-side down for 5-6 minutes until deeply golden, turn and colour the other side, then lift out. It needn't be cooked through yet.
- Lower the heat to medium. Add the onion and red pepper to the pan and cook gently for 8-10 minutes until soft and sweet, stirring now and then. Stir in the garlic for a minute, then the grated tomato and smoked paprika, cooking until the mixture darkens into a thick, jammy sofrito.
- Scatter in the rice and stir for a minute to coat it in the sofrito. Pour in the saffron stock, add the green beans and taste for salt. Nestle the chicken back in, skin up.
- Bring to a lively simmer, then reduce to a steady low bubble. From here do not stir — let the rice cook undisturbed for about 18-20 minutes, turning the pan occasionally so it cooks evenly, until the liquid is absorbed and the rice is tender.
- Check the chicken is cooked through with no pink at the bone and the juices run clear. For socarrat, turn the heat up for the final 1-2 minutes until you hear a gentle crackle and smell toasting rice — stop before it burns.
- Cover loosely with foil and rest off the heat for 5 minutes. Scatter with parsley and serve straight from the pan with lemon wedges to squeeze over.
