These fish tacos hit every note: crunchy coated fish, a sharp lime-dressed slaw and a smoky chipotle drizzle, all wrapped in a warm tortilla. Use any firm white fish and shallow-fry until golden. The slaw and sauce can be made ahead, so once the fish is cooked youβre minutes from the table.
Ingredients
- 500 g skinless white fish fillets β cod, haddock or pollock, cut into finger-width strips
- 60 g plain flour
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 0.5 tsp garlic granules
- 1 large egg β beaten
- 80 g panko breadcrumbs
- 4 tbsp sunflower oil β for shallow-frying
- 8 small soft tortillas β corn or flour
- 200 g white cabbage β finely shredded
- 1 carrot β grated
- 2 limes β 1 juiced, 1 in wedges
- 4 tbsp mayonnaise
- 1-2 tsp chipotle paste β to taste
Method
- Make the slaw: toss the shredded cabbage and grated carrot with the juice of 1 lime and a good pinch of salt. Set aside to soften while you cook.
- Stir the mayonnaise together with the chipotle paste and a splash of lime juice. Taste and adjust the heat, then chill until needed.
- Set up three shallow bowls: mix the flour with the smoked paprika, cumin, garlic granules and a good pinch of salt in the first; the beaten egg in the second; the panko in the third.
- Pat the fish strips dry, then coat each one in seasoned flour, dip in egg, and press firmly into the panko until fully covered.
- Heat the oil in a large frying pan over a medium-high heat. Fry the fish in batches for 2-3 minutes per side until deep golden and crisp, and cooked through with no translucent flesh remaining and the fish flaking easily.
- Lift onto kitchen paper to drain. Warm the tortillas in a dry pan or microwave for a few seconds until soft and pliable.
- Build each taco with a spoonful of slaw, two or three pieces of fish, a drizzle of chipotle mayo and a squeeze of lime. Serve straight away.
