The Full English is Britain's greatest breakfast: sizzling sausages, crisp bacon, a runny fried egg and all the trimmings on one loaded plate. The trick isn't any single element but the timing, so everything arrives hot at once. This version keeps it classic and utterly achievable.

A great Full English lives or dies by timing, not skill. Get the slow items going first, hold everything warm, then land the eggs last so the yolks stay soft. This is the traditional line-up: bangers, back bacon, eggs, beans, tomatoes, mushrooms and fried bread, cooked properly and all hot together on the plate.

Ingredients

Scale for 2 servings
  • 4 good pork sausages
  • 4 rashers back bacon
  • 2 large eggs
  • 200 g baked beans — roughly half a standard tin
  • 2 tomatoes — halved; or a small handful of cherry tomatoes
  • 150 g chestnut mushrooms — halved or thickly sliced
  • 2 slices thick white bread
  • 2 tbsp vegetable oil
  • 1 tbsp butter
  • 1 pinch salt and black pepper
  • 2 black pudding slices — optional but traditional

Method

  1. Heat your oven to a low warming setting and pop two plates inside. Set a large frying pan over medium heat with 1 tbsp of the oil. Add the sausages and cook gently, turning every couple of minutes, for 15-18 minutes until deep golden all over and cooked through with no pink in the middle.
  2. Once the sausages are a few minutes in, lay the bacon alongside them (add the black pudding now too, if using). Fry for 3-4 minutes each side until the bacon edges crisp and the black pudding has a set crust. Move cooked items to the warm plates in the oven as they finish.
  3. Add the butter and mushrooms to the same pan with a pinch of salt. Fry for 5-6 minutes until golden and any liquid has cooked off, then add to the warming oven.
  4. Put the tomato halves cut-side down in the pan for 2-3 minutes until browned, flip, season and cook 1 minute more until softened. Move to the oven.
  5. Tip the beans into a small pan and warm through over low heat, stirring now and then, until piping hot. Keep on the lowest heat.
  6. Add the last 1 tbsp oil to the frying pan and turn up to medium-high. Fry the bread for 1-2 minutes each side until crisp and golden, soaking up the pan juices. Set aside.
  7. Crack the eggs into the same pan. Fry for 2-3 minutes, spooning a little hot oil over the tops, until the whites are fully set and no longer translucent but the yolks stay soft.
  8. Pull the warm plates from the oven and load everything on: sausages, bacon, black pudding, mushrooms, tomatoes and fried bread, with a pile of hot beans and the fried egg on top. Serve at once while everything is piping hot.

  • A splash of Worcestershire sauce on the mushrooms

  • Cooking sausages too fast over high heat so they char outside while staying raw within, gentle and slow is the way
  • Overcrowding the pan, which steams the food instead of browning it, work in the order given and use the oven to hold
  • Frying the eggs too early so the yolks firm up before serving, always cook them last
  • Skipping the warm plates, a cold plate turns a hot fry-up lukewarm in seconds

Storage: A Full English is best eaten straight away, but leftover cooked components keep covered in the fridge for up to 2 days.

Reheating: Reheat sausages, bacon and mushrooms in a hot pan or oven until piping hot throughout; cook fresh eggs rather than reheating them.
