Sausage and bean casserole is a classic budget dinner for good reason β€” it’s cheap, filling and made almost entirely from things you can keep in the cupboard and freezer. It’s also brilliantly flexible: use whatever sausages and beans you have, and adjust the smokiness and heat to taste. Make a big batch, because it only improves the next day.

Ingredients

Scale for 4 servings
  • 8 sausages
  • 1 tbsp oil
  • 1 onion β€” sliced
  • 1 red pepper β€” sliced
  • 2 cloves garlic β€” crushed
  • 1 tsp smoked paprika
  • 400g tin chopped tomatoes
  • 400g tin cannellini or mixed beans β€” drained
  • 200ml chicken or vegetable stock
  • 1 tbsp Worcestershire sauce

Method

  1. Brown the sausages in the oil in a large pan for 6–8 minutes until coloured all over (they'll finish cooking later). Lift out and slice into chunks if you like.
  2. Soften the onion and pepper in the same pan for 6 minutes, then add the garlic and paprika and cook for 1 minute.
  3. Stir in the tomatoes, beans, stock and Worcestershire sauce, then return the sausages.
  4. Simmer for 20–25 minutes until the sauce is rich and the sausages are cooked all the way through (piping hot, no pink).
  5. Season to taste and serve.
