When you want something hearty with minimal fuss, this sausage pasta bake delivers. Squeeze the meat straight from the skins so it browns into savoury nuggets, simmer a quick tomato sauce, then bake it all under melting cheese. It uses everyday store-cupboard bits and feeds four generously, with leftovers that reheat brilliantly the next day.

Ingredients

Scale for 4 servings
  • 300 g dried pasta — penne, fusilli or rigatoni
  • 6 pork sausages — about 400 g, good quality
  • 1 tbsp olive oil
  • 1 onion — finely chopped
  • 3 garlic cloves — crushed
  • 1 tsp dried oregano
  • 0.5 tsp chilli flakes — optional, for a little heat
  • 2 tbsp tomato purée
  • 2 x 400 g tins chopped tomatoes
  • 1 tsp caster sugar
  • 125 g mozzarella — torn or grated
  • 60 g mature Cheddar — grated
  • 1 handful fresh basil — torn, to serve

Method

  1. Preheat the oven to 200C/180C fan/gas 6 and bring a large pan of salted water to the boil. Cook the pasta for 2 minutes less than the packet says, so it stays firm, then drain and reserve a mugful of the cooking water.
  2. Meanwhile, heat the oil in a large ovenproof frying pan or flameproof dish. Squeeze the sausage meat out of the skins in rough chunks and fry over a medium-high heat for 6-8 minutes, breaking it up with a spoon, until deeply browned and cooked through with no pink remaining.
  3. Add the onion and cook for 5 minutes until softened, then stir in the garlic, oregano and chilli flakes and fry for another minute until fragrant.
  4. Stir in the tomato purée and cook for a minute, then tip in the chopped tomatoes and sugar. Fill one empty tin with water, swirl and add that too. Season well and simmer for 8-10 minutes until slightly thickened.
  5. Fold the drained pasta through the sauce, loosening with a splash of the reserved pasta water if it looks tight. It should be generously coated and a little saucy, as it firms up in the oven.
  6. Scatter over the mozzarella and Cheddar. Bake for 18-20 minutes until the cheese is golden and bubbling and the sauce is piping hot throughout.
  7. Rest for 5 minutes, then scatter with torn basil and serve straight from the dish.
