This is the kind of dinner that looks after itself. You brown a little, tip everything into the slow cooker, and come back hours later to fall-apart chicken in a glossy, herby gravy. Bone-in thighs give the best flavour and stay juicy, while carrots, leeks and potatoes soak up all that goodness. Perfect for busy days and cold evenings.

Ingredients

  • 8 bone-in, skinless chicken thighs — about 1kg
  • 1 tbsp olive oil
  • 1 large onion — sliced
  • 2 leeks — trimmed and thickly sliced
  • 3 carrots — cut into chunks
  • 400 g baby potatoes — halved if large
  • 2 garlic cloves — crushed
  • 2 tbsp plain flour
  • 500 ml hot chicken stock
  • 1 tbsp Dijon mustard
  • 2 tsp dried mixed herbs
  • 2 bay leaves
  • 100 ml double cream — optional, to finish
  • 1 handful fresh parsley — chopped, to serve

Method

  1. Heat the olive oil in a large frying pan over a medium-high heat and brown the chicken thighs for 2-3 minutes each side until golden. Transfer them to the slow cooker. Browning is optional but gives a much deeper flavour.
  2. Add the onion, leeks, carrots, potatoes and garlic to the slow cooker, tucking them around the chicken.
  3. Sprinkle the flour over the chicken and vegetables and toss lightly to coat, which will thicken the sauce as it cooks.
  4. Stir the Dijon mustard and dried herbs into the hot stock, then pour it over everything. Tuck in the bay leaves and season well with salt and pepper. The liquid should come about two-thirds of the way up.
  5. Cover and cook on low for 5 hours (or high for about 3), until the chicken is tender, pulls easily from the bone and is cooked through with no pink remaining, and the vegetables are soft.
  6. Remove the bay leaves. If you like a richer sauce, stir through the double cream and let it warm through for a few minutes. Taste and adjust the seasoning.
  7. Scatter with fresh parsley and serve piping hot, straight from the pot.

Why this works

The long, low heat breaks down the connective tissue in bone-in thighs, so the meat turns silky and tender while the bones enrich the gravy. Flour tossed over the ingredients thickens the sauce gently from within, no separate roux needed.

Common swaps

  • Use boneless thighs if you prefer, reducing the cook time slightly to keep them juicy.
  • Swap leeks for celery or a couple of parsnips for a sweeter, earthier flavour.
  • Stir in a handful of frozen peas for the final 15 minutes for a pop of colour.
  • Leave out the cream and add a splash of white wine to the stock for a lighter finish.
  • Use gluten-free flour and stock to make the whole dish gluten-free.

Common mistakes to avoid

  • Lifting the lid to peek releases heat and can add 20-30 minutes to the cook time, so leave it be.
  • Adding too much liquid, slow cookers don't lose much to evaporation, so the sauce should not cover the ingredients completely.
  • Using chicken breast, which dries out over long cooking, thighs stay far more tender.
  • Under-seasoning at the start, taste and adjust the salt and pepper before serving.

Storage, freezing & reheating

Storage: Cool leftovers quickly and keep in an airtight container in the fridge for up to 3 days.

Freezing: Freezes well for up to 3 months, ideally before adding the cream. Defrost fully in the fridge overnight before reheating.

Reheating: Reheat gently in a pan or the microwave until piping hot throughout, adding a splash of stock if the sauce has thickened.
