The secret is a properly reduced, creamy sauce that clings to the chicken rather than pooling at the bottom, and a puff pastry lid brushed with egg for a deep golden finish. Ingredients
- 600 g boneless skinless chicken thighs — cut into 2-3 cm chunks
- 30 g butter
- 1 tbsp olive oil
- 1 onion — finely chopped
- 250 g chestnut mushrooms — sliced
- 2 cloves garlic — crushed
- 2 tbsp plain flour
- 300 ml chicken stock (10 fl oz)
- 100 ml double cream
- 1 tbsp wholegrain or Dijon mustard

- 320 g ready-rolled puff pastry — 1 sheet

Method
- Heat the butter and oil in a large frying pan over a medium-high heat. Season the chicken, then fry in batches for 4-5 minutes until golden on the outside. Lift out onto a plate; it does not need to be cooked through yet.
- Lower the heat to medium and add the onion to the same pan. Cook for 4-5 minutes until softened, then add the mushrooms and garlic and fry for another 5 minutes until the mushrooms are golden and any liquid has cooked off.
- Stir in the flour and cook for 1 minute, then gradually pour in the stock, stirring constantly to keep it smooth. Return the chicken and any resting juices to the pan and simmer for 8-10 minutes until the sauce has thickened and the chicken is cooked through with no pink remaining.
- Stir through the cream, mustard and parsley, then taste and season well. The sauce should be thick and glossy, not runny. Tip the filling into a 1.2-litre pie dish and leave to cool for 10 minutes so it does not melt the pastry.
- Preheat the oven to 200C fan / 220C / gas 7. Brush the rim of the dish with beaten egg, then lay the pastry sheet over the top. Press the edges onto the rim to seal and trim off the excess with a knife.
- Brush the pastry all over with beaten egg and cut a small slit in the centre to let steam escape. If you like, use the trimmings to decorate the top.
