Huevos rancheros is what farmhands ate to see them through a hard morning, and it still delivers. The trick is a lively ranchera salsa built on ripe tomatoes, onion, garlic and chilli, spooned generously over eggs and soft corn tortillas. Nothing fussy, just bold, honest flavour that turns breakfast into something you actually look forward to.

Ingredients

Scale for 2 servings
  • 4 corn tortillas — flour tortillas work if that's what you have
  • 4 large eggs
  • 400 g tin chopped tomatoes — or 4 ripe fresh tomatoes, chopped
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed
  • 1-2 jalapeño or green chillies, finely chopped — deseed for less heat; a serrano is more authentic
  • 1 tsp ground cumin
  • 0.5 tsp dried oregano — Mexican oregano if you can find it
  • 3 tbsp vegetable or sunflower oil
  • 1 lime, cut into wedges
  • 1 small handful fresh coriander, roughly chopped
  • 1 ripe avocado, sliced — optional, to serve

Method

  1. Warm 1 tbsp of the oil in a frying pan over a medium heat. Add the onion and chilli with a pinch of salt and cook for 4-5 minutes until softened and translucent.
  2. Stir in the garlic, cumin and oregano and cook for 1 minute until fragrant, then tip in the chopped tomatoes. Simmer for 6-8 minutes, stirring now and then, until thickened to a spoonable salsa. Season with salt to taste and keep warm over a low heat.
  3. Meanwhile, warm the tortillas: hold each one over a low gas flame with tongs for a few seconds a side, or heat in a dry pan until soft and lightly toasted. Wrap in a clean tea towel to keep warm.
  4. Heat the remaining 2 tbsp oil in a separate frying pan over a medium-high heat. Crack in the eggs and fry for 2-3 minutes, spooning a little hot oil over the tops, until the whites are fully set and no longer translucent and the yolks are as runny or firm as you like.
  5. Lay 2 warm tortillas, overlapping, on each plate. Slide 2 fried eggs on top.
  6. Spoon the warm ranchera salsa generously around and over the eggs, leaving the yolks peeking through.
  7. Scatter with coriander, tuck avocado slices alongside and serve straight away with lime wedges for squeezing over.
