This is the ultimate midweek fallback: tender pasta tossed with flaked tuna, sweet pops of corn and a light creamy sauce. It uses ingredients you almost certainly have in already, and it comes together in one pan while the pasta boils.

When the fridge looks bare and everyone’s hungry, this is the dish to reach for. Tinned tuna, a can of sweetcorn and a handful of pantry staples turn into a comforting, creamy pasta in about twenty minutes. It’s cheap, filling and endlessly adaptable, and it wins over children and grown-ups alike without any fuss.

Ingredients

Scale for 4 servings
  • 300 g dried pasta — fusilli, penne or conchiglie work well
  • 2 x 145 g tins tuna in spring water or oil — drained
  • 1 x 198 g tin sweetcorn — drained
  • 1 tbsp olive oil
  • 1 small onion — finely chopped
  • 1 clove garlic — crushed
  • 150 g crème fraîche — or soft cream cheese
  • 2 tbsp mayonnaise — optional, for extra richness
  • 1 tsp Dijon mustard
  • 1 lemon — zest and a squeeze of juice
  • 30 g Cheddar — grated, plus extra to serve
  • 1 small handful fresh parsley or chives — chopped
  • to taste salt and black pepper

Method

  1. Bring a large pan of well-salted water to the boil and cook the pasta according to the packet timings until just tender. Scoop out a mugful of the cooking water before draining.
  2. Meanwhile, warm the olive oil in a wide frying pan or saucepan over a medium heat. Add the onion and a pinch of salt and soften for 4-5 minutes until translucent, then stir in the garlic and cook for another minute until fragrant.
  3. Lower the heat and stir in the crème fraîche, mayonnaise if using, Dijon mustard and lemon zest. Let it warm through gently without letting it boil, loosening with a splash of the pasta water to make a silky sauce.
  4. Fold in the drained tuna and sweetcorn, breaking the tuna into flakes rather than a paste. Warm through for a couple of minutes and season well with salt and plenty of black pepper.
  5. Tip the drained pasta into the sauce and toss to coat every piece, adding more pasta water a splash at a time until it clings loosely and glossily.
  6. Stir through the grated Cheddar and a squeeze of lemon juice, then taste and adjust the seasoning. Serve straight away, scattered with parsley and a little extra cheese.
