Fat sausages baked into a crisp, puffed-up Yorkshire batter, served with a deeply savoury onion gravy. The secret is smoking-hot fat and a rested batter, so it rises tall every time. A proper Sunday supper that feeds four for very little.
Toad in the hole lives or dies by the rise, and the trick is simple: get the fat properly hot, use a batter that has rested, and don’t open the oven early. Do that and you’ll pull out a dramatic golden crown wrapped around sizzling sausages. Serve it with a jug of onion gravy and you’ve got a cheap, cheering supper.
Ingredients
- 8 good-quality pork sausages — about 400-450g
- 140 g plain flour
- 3 large eggs
- 200 ml whole milk
- 75 ml cold water
- 3 tbsp sunflower or vegetable oil — or beef dripping
- 0.5 tsp fine salt
- 1 tsp wholegrain or English mustard — optional, in the batter
- 2 onions — for the gravy, thinly sliced
- 1 tbsp butter — for the gravy
- 1 tbsp plain flour — for the gravy
- 500 ml beef or vegetable stock — hot
- 1 tsp Worcestershire sauce
Method
- Make the batter first so it can rest. Whisk the flour and salt in a bowl, make a well, crack in the eggs and whisk in the milk and water until smooth and lump-free. Stir in the mustard if using, then leave to stand at room temperature for at least 30 minutes while you get on with the onions.
- For the gravy, melt the butter in a pan over medium-low heat, add the sliced onions and a pinch of salt, and cook gently for 15-20 minutes, stirring now and then, until soft and golden. Stir in the flour, cook for a minute, then gradually whisk in the hot stock and Worcestershire sauce. Simmer until glossy and thickened, then keep warm.
- Heat the oven to 220C/200C fan/gas 7. Pour the oil into a roasting tin roughly 20 x 30cm and add the sausages. Slide into the oven for 10 minutes so the fat gets smoking hot and the sausages start to colour and render.
- Give the rested batter a final brisk whisk. Pull the tin out carefully, the fat should be shimmering. Quickly pour the batter evenly around the sausages so it sizzles on contact, then return the tin to the oven straight away.
- Bake for 25-30 minutes without opening the door. The batter should be puffed, deep golden and crisp at the edges, and the sausages cooked through with no pink remaining and piping hot throughout.
- Serve at once, cut into portions, with the hot onion gravy poured over or in a jug alongside.
