These are the cookies you make when you want something warm and gooey fast. Melted butter and extra brown sugar give a chewy centre and crisp edge, while pulling them from the oven while they still look slightly underdone keeps the middles soft. No mixer, no dough chilling, just one bowl and a wooden spoon.

Ingredients

Scale for 12 servings
  • 150 g unsalted butter — melted and slightly cooled
  • 150 g soft light brown sugar
  • 75 g caster sugar
  • 1 large egg — plus 1 extra yolk, at room temperature
  • 2 tsp vanilla extract
  • 250 g plain flour
  • 1/2 tsp bicarbonate of soda
  • 1/2 tsp fine salt
  • 200 g dark or milk chocolate chips — or chopped chocolate

Method

  1. Heat the oven to 180C fan (200C conventional / gas 6) and line two baking trays with baking paper.
  2. In a large bowl, whisk the melted butter with both sugars until smooth and glossy. Beat in the whole egg, the extra yolk and the vanilla until the mixture thickens slightly.
  3. Add the flour, bicarbonate of soda and salt, then fold through with a wooden spoon until just combined and no dry streaks remain. Stir in the chocolate chips.
  4. Scoop heaped tablespoons of dough (about 40 g each) and roll into balls. Space them well apart on the trays, six per tray, as they spread.
  5. Bake for 11 to 13 minutes, until the edges are set and golden but the centres still look pale and slightly underdone. Do not wait for the middles to firm up in the oven.
  6. Leave the cookies on the trays for 5 minutes to finish setting, then lift onto a wire rack. For extra neat edges, swirl a round cutter around each hot cookie to nudge it into a circle.
  7. Serve just warm while the chocolate is still molten, or cool completely for a chewier bite.

  • A scoop of vanilla ice cream for warm cookie sandwiches
  • A mug of hot chocolate or coffee
  • Fresh raspberries to cut the sweetness

Why this works

Melted butter and a high ratio of brown sugar mean more moisture and chew, while the short bake sets the edges but leaves the centres soft. Adding an extra yolk adds richness and helps the cookies stay tender for days.

  • Swap the chocolate chips for chopped white chocolate and dried cranberries
  • Use half milk, half dark chocolate for a mellower flavour
  • Add 75 g chopped toasted pecans or walnuts for crunch
  • Replace the caster sugar with an extra 50 g brown sugar for an even chewier cookie
  • Use a gluten-free plain flour blend to make them coeliac-friendly

Common mistakes to avoid

  • Overbaking: they should look underdone when they come out and will firm up on the tray.
  • Using hot melted butter, which makes the dough greasy and the cookies spread too thin.
  • Crowding the trays so the cookies merge; leave plenty of space as they spread a lot.
  • Overmixing after adding the flour, which develops gluten and gives tough, cakey cookies.

Storage, freezing & reheating

Storage: Store in an airtight container at room temperature for up to 5 days; a slice of bread in the tub keeps them soft.

Freezing: Freeze raw dough balls on a tray, then bag them for up to 3 months and bake from frozen, adding 1 to 2 minutes. Baked cookies also freeze well for up to 2 months.

Reheating: Warm baked cookies in a 160C oven for 3 to 4 minutes, or 10 seconds in the microwave, to bring back the molten chocolate.
