These flapjacks are properly chewy in the middle with just-crisp golden edges, thanks to the right balance of butter, sugar and golden syrup. Everything comes together in one saucepan, so there's barely any washing up. Cut them while warm for clean squares that hold their shape.
Chewy flapjacks live and die by two things: not over-baking them, and getting the sugar-to-syrup ratio right. Bake too long and they turn hard and crumbly; pull them out when the edges are golden but the centre still looks soft, and they set into that perfect bendy chew. This one-pan version is about as easy as baking gets.
Ingredients
- 200 g unsalted butter (7 oz) — plus extra for greasing
- 150 g light soft brown sugar (5 oz)
- 3 tbsp golden syrup — heaped
- 350 g rolled porridge oats (12 oz) — not jumbo or instant
- 1 tsp vanilla extract
- 1 pinch fine sea salt
Method
- Preheat the oven to 180C/160C fan/gas 4. Grease a 20cm square tin and line the base and sides with baking paper, leaving an overhang for lifting out later.
- Put the butter, brown sugar and golden syrup in a medium saucepan over a low heat. Warm gently, stirring now and then, until the butter has melted and the sugar has dissolved into a glossy mixture. Don't let it boil.
- Take the pan off the heat and stir in the vanilla and salt.
- Tip in the oats and stir thoroughly until every oat is coated and the mixture looks evenly glossy. It should be thick and sticky, not soupy.
- Scrape into the tin and press down firmly and evenly with the back of a spoon. The firmer you press, the more the flapjacks hold together.
- Bake for 22-25 minutes, until the edges are golden brown but the centre still looks slightly soft and pale. It firms up as it cools, so resist baking longer.
- Leave in the tin for 10 minutes, then score into 12 squares while still warm. Cool completely before lifting out and cutting through for clean, chewy pieces.
