This version keeps the sponge soft and buttery, then soaks it in a punchy lemon syrup the moment it leaves the oven, so it drinks up all that zing and sets into a crackly sugar crust. It’s genuinely easy, needs no fancy kit, and always disappears fast.

Ingredients

Scale for 10 servings
  • 225 g unsalted butter β€” softened, plus extra for the tin
  • 225 g caster sugar
  • 4 medium eggs β€” room temperature
  • 225 g self-raising flour
  • 1 tsp baking powder
  • 2 unwaxed lemons β€” zest for the sponge, juice for the drizzle
  • 2 tbsp whole milk
  • 1 pinch fine salt
  • 150 g granulated sugar β€” for the drizzle topping

Method

  1. Preheat the oven to 180C/160C fan/gas 4. Grease a 900g loaf tin and line with baking paper, leaving an overhang for easy lifting.
  2. Beat the softened butter and caster sugar together until pale and fluffy, about 3-4 minutes. This traps air and keeps the sponge light.
  3. Add the eggs one at a time, beating well after each. If the mix looks like it's splitting, add a spoonful of the flour to bring it back.
  4. Fold in the self-raising flour, baking powder, salt and the zest of both lemons with a spoonful of milk until just combined and smooth. Don't overmix.
  5. Spoon into the tin, level the top and bake for 40-45 minutes, until golden and a skewer comes out clean. Cover loosely with foil if it browns too fast.
  6. While it bakes, stir the juice of both lemons with the granulated sugar to make a loose, gritty drizzle. Don't dissolve it fully; the sugar gives the crunchy top.
  7. As soon as the cake is out, prick it all over with a skewer and spoon the drizzle slowly over the hot sponge so it soaks in and the sugar sets on top.
  8. Leave to cool completely in the tin before lifting out, so it firms up and holds the crackly crust.
